Today I’m helping you shake up your mornings with these healthy breakfast pancakes! They’re full of skin friendly nutrients to help keep your skin clear and keep you full till lunchtime. Plus, the addition of hormone balancing superfoods Maca and Reishi make these the healthiest pancakes you can eat for breakfast! I’ve also made a vegan version which you can view here.
You may have read on my Instagram that I’d recently attended a webinar hosted by Robyn from The Hormone Diva (if you suffer with weight fluctuations and crazy bitch mood swings she’s definitely one to check out!) Anyway, Robyn talked about how she was (or thought she was being) super super healthy, counting calories and eating tonnes of fruit and veg smoothies all the time but it didn’t appear to improve her PMS and mood swings. It wasn’t until she striped everything back and started making her diet and daily routine less complicated, that she finally felt her moods lift. Robyn’s webinar inspired me to stop over-obsessing about how many greens I could fit into my morning smoothie and start enjoying the most important meal of the day a bit more! No more blitzing and drinking on the go, I was going get organised with my breakfasts and start my day off right.

Healthy Breakfast Pancakes for Happy Hormones
These healthy breakfast pancakes are so good and the best part is it’s nearly impossible to get bored of them as you can get really creative with all the toppings! Fed up of strawberries? Have some coconut yogurt and passionfruit instead and if you really want to treat yourself at the weekend, enjoy them with some organic bacon and maple syrup!
Not only are these breakfast pancakes really easy to make, you can also be pretty flexible with the ingredients too – without affecting the taste that much! So if you can’t get your hands on coconut flour, you can just replace it with extra buckwheat flour and if you don’t have any coconut milk in your cupboard, you can use any dairy-free alternative instead!
Not only are these pancakes easy on your digestion and packed full of skin loving nutrients, I’ve also included my two favourite hormone balancing superfoods Reishi and Maca! Maca works to boost low levels of hormones and Reishi can help reduce high levels of hormones – both of which can contribute to acne. Read more below on the benefits of Maca and Reishi for acne:
Maca for happy hormones
Maca root powder is a powerful adaptogen, which means it helps balance, support and strengthen your whole body by helping your body to ‘adapt’ to stressful situations and increase your resistance to physical, environmental, emotional and mental stress that may otherwise cause hormone disruption and imbalance. For example, if your body isn’t producing enough of a certain hormone, adaptogens can help stimulate your endocrine system into producing the correct amount your body needs and vice versa, if you’re over-producing a specific hormone, adaptogens can help bring your body back into balance.
Maca can be an excellent superfood to take if you’re suffering from acne due to a hormone deficiency. For example, if you’ve recently come off the pill or if you are pre-menopausal/menopausal then you could be dealing with imbalanced or low levels of oestrogen and progesterone and could really benefit from some Maca.
If you struggle with the following symptoms then Maca could really help bring you body back into balance:
- Low/no sex drive
- Brain fog/difficulty concentrating
- Mood swings/anxiety and/or depression
- PMS symptoms
N.B If you have an iodine allergy or Hashimoto’s then it’s advised that you omit the Maca from this recipe as it contains significant amounts of iodine.
Reishi for clear skin
Reishi mushrooms or ganoderma lucidum help to support your hormones and are one of the most studies herbs on the planet! Reishi mushrooms have been shown to help lower testosterone levels and are considered an anti-androgen. A study in 2006 showed that ganoderma contains oils called triterpenoids which can reduce the production of 5-alpha-reductase, a hormone that can increase testosterone production! It’s also rich in antioxidants and helps to support your liver – an essential part of clearing your acne!

- 2 eggs
- 2 tsp baking powder
- 1/2 cups buckwheat flour
- 1/2 cup coconut flour
- 1/2 cup tapioca flour
- 1 cups coconut milk
- 1 tbsp coconut oil (+ extra for cooking)
- 1 tsp Maca (optional)
- 1 tsp Reishi (optional)
- Add all the ingredients to a mixing bowl and whisk till smooth
- Heat up some coconut oil in a frying pan on a medium heat
- Dollop a heaped tablespoon of pancake mixture into the frying pan and flatten the mixture out
- Depending on the size of your pan (mine takes 3 pancakes at a time) add 1 or 2 more dollops of pancake mixture to the pan.
- Cook for 3 minutes on each side and transfer to a cooling rack
- Once all the pancakes have been cooked you can begin adding your choice of toppings or if you're preparing the pancakes for the following week, wait till they're cool then store them in an air-tight container
- Consume within 6 days
- You can substitute coconut flour for extra buckwheat and/or coconut milk for any dairy-free milk.
